Back again this year is a delicious event, very popular with Florentines: the rice fritters, a speciality of the Circolo SMS in San Donato in Collina (hamlet of Rignano sull'Arno). From January 18 to March 19 2025 every Saturday and Sunday from 8:30am as long as supplies last.
It is traditional, in Florence, to celebrate carnival also at the table, with traditional pastries of the season: schiacciata alla fiorentina (sweet flatbread), cenci (fried dough) and, above all, fritters. There are several types, but the best known and loved is the one made with rice; cooked in milk, with added sugar and lemon peel and then fried in spoonfuls in a pan.
